Beanless Turkey Chili

High protein, veggie filled, dairy free cozy soup comin’ atcha!!!

This one pot chili is was perfect when I prepped it last weekend & to spruce it up and even more I sautéed zoodles with a light swiss laughing cow wedge and mushrooms to add to the already made chili, just to make it more nutrient filled and high volume!

Ingredients~

2 sweet yellow onions- finely chopped

1.5 red bell peppers - finely chopped

2 yellow squashes (cut into halves and air fried before hand)

1/2 can of fire roasted diced tomatoes 

1 can of green chilis

1 squeezed lemon

1 frozen garlic cube (from trader joes)

3-4 cups of chicken broth (depending how thick you want the soup)

2  TB simple truth taco simmer sauce (adds flavor)

6 oz of extra lean 99& ground turkey 

Cumin, pink salt, pepper, chili powder to taste

Beforehand, I prepped 1 lb of the ground turkey, but only used about half for this recipe and saved the other portion to have for lunch.

To  save time, the day before making this soup, I air fired the yellow squash @400 for 16 minutes plus I love how crispy it gets!

In a big pot; I sprayed with coconut oil spray, added the garlic cube, chops sweet yellow onions and browned those with the taco simmer sauce and or you can use salsa, frontera fajita mix is good too.

If the onions start to stick, I add a splash of chicken broth to make them translucent/ more soft.

Once those are sautéed, I add the fire roasted tomatoes, green chilis, lemon juice &  other spices.

Add in peppers, chicken broth, cooked turkey and air fried squash.

I let it come to a boil and put it on simmer for 1-2 hours to let flavors combine!

Feel free to add in anything else you wish; add in more ground turkey for added protein, lean beef and or chicken too! 

Hoping this gives you some inspiration & can also freeze perfectly!

I weighed the final cooked chili out to be 1506 grams & divided it by 4 (for 4 servings) so each night for dinner I would weigh out 376 grams : 109 calories- macros (.8 fat, 12.2 carb, 13 protein)
