Cauliflower “Cream” Alfredo Sauce
RICH & CREAMY cauliflower cream sauce! This is a single serving recipe--
I used leftover roasted cauliflower & sweet onions;
Which were roasted at convection bake 425 for 30 min or until browned with coconut oil spray and pink salt
Threw that into a mini ninja blender cup with 2 cups of chicken broth, juice of 1 lemon, fresh garlic (a spoonful), 1 light swiss laughing cheese wedge (for more creaminess at 2), garlic powder, black pepper. Then, if you have the white cheddar or garlic parm kernel seasonings on hand, those are great to add in for more flavor!
If you want to make a big batch to have on hand, I would triple the recipe!
A tablespoon or two of any cream cheese can work as well, just will vary the ending fat content and vary the macros a bit.
BLENDED UP and if it's too thick for your liking, add in more chicken broth!!
Served over prepped roasted spaghetti squash, sautéed mushrooms & onions (recipe under post of “side dishes”), and leftover steamed green beans!
You can also pair it with pasta, on top of a protein like chicken, meatballs, or even in a casserole bake, possibilities are endless!
Throw any of your fresh produce and or leftover veggies in & this sauce tastes like the real Afredo but low fat & filled with hidden veggies!!
For two cups chicken broth, 1 light swiss laughing cow wedge, 200 grams of raw cauli florets (weighed before roasting)... I do not track onions... but it comes out to be 127 calories-
