Egg Roll in a bowl
This is a GREAT, low carb, lunch and or dinner idea!
I prepped this in advance for lunches last week & it was perfect to reheat and over 15 grams of protein per serving!!!
I created my own recipe in myfitnesspal & weighed the final batch (cooked) divided that weight by 4 servings (in grams) and separated it into 4 containers for lunch. Easy to pre log & to have when life gets hectic during the day!
Cooked weight = 1026 grams (divided by 4 servings) / 4= 256 grams weighed out for each serving!
Macros for 1/4th of the recipe is 116 calories (1.3 fat, 5.8 carbs, 17.6 protein)
Whipped it up in under 20 minutes too!
Ingredients:
2 bags of cole slaw
10 oz (almost a full lb) of extra lean ground chicken (can use turkey or beef too)
Braggs Liquid Aminos (to taste)
6 tablespoons G Hughs Teryiaki marinade
Everything but the Bagel Seasoning (from Trader Joes)
Green onions (optional) to garnish
Directions:
I weighted the chicken RAW since I put it into the myfitnesspal recipe RAW (cooked weight is different) than I cooked it separate in a skillet off to the side.
Next, I sautéed both bags of cole slaw on high heat in my Wok in coconut oil spray. I kept stirring until it was wilted down/ browned.
Towards the end I added the liquid aminos & teriyaki sauce.
Once chicken was browned, I added that to the stir fried cole slaw.
Chop green onions (both ends off) and dice them to add into the dish at the end with any seasonings you prefer. I recommend that ETBS for sure!!!
I ate cold one day and reheated in the microwave for lunch the others ;) both are delish!
Try out this easy idea & if you want higher protein…. do 1 full lb of lean meat or even 2 lbs! If you want more carbs, you could always add in rice or quinoa!
