Pumpkin Oats

Desired amount of oats (I used between 20-30 grams) depending on how many carbs I want to add to this meal

- 100-130 riced carrots (hidden veggie & adds volume) 

- 60-90 grams pumpkin puree (adds creaminess)

- CAN add protein powder, which will boost the protein amount

- 2-3 servings of egg whites (I like 138 grams)

- Two capfuls of skinny syrup or add sweetener of choice

- Cinnamon, pumpkin pie spice to taste

- Enough water to cover the dry oats/ raw carrots (about ½ cup)

MIX only the water, sweeteners/ spices, carrots & oats… 

Microwave on power 70% for 4 minutes.

Cooking on power 70% is essential to soften those carrots, and they become the same consistency as the oats themselves. 

After that's cooked, add in egg whites & cook at power 70% then again but for 5 minutes to cook the egg whites in more evenly and it makes them like “CAKE”!

You cannot taste the egg whites or carrots if you add enough sweetener and nut butter on top! 

If it's a bit dry, I like to add a splash of almond or cashew milk… then a drizzle of my sf walden farms syrup- the maple walnut is much better than the pancake syrup flavor. This is when you would add in your desired amount of protein powder if you like, vanilla or pumpkin pie spice is fabbbb to go with the theme!

Then it's up to you, what you wish to top your oats with! 

My go to is stirring in powdered peanut butter, Lion's Choice is my favorite saves ya somee fat grams & adds more protein! Then drizzle some nut butter, All American always for me!!
