Pumpkin Protein Cookies

My beloved PROTEIN PUMPKIN COOKIES!!

Perfect to help reach your protein goal & so macro friendly!

Can be done with chocolate/ vanilla protein, black cocoa & sf chocolate pudding mix for more “brownie like” flavor! Or if your not a chocolatey gal…. you can do any protein flavor & just sf cheesecake / vanilla pudding mix like I have done!

You can eat ALL 6 of them for only 192 calories (15 carbs, 3 fat, 22 protein)

Ingredients~

90 grams pumpkin pure (can use sweet potato pure or apple sauce) but you cannot taste the pumpkin!

46 grams egg whites

4 grams sf cheesecake pudding mix (sweetens & thickens the batter)

26 grams 1st Phorm PSL or Vanilla Level-1 protein  (this is just unbelievable + perf for baking)

Droplets of liquid vanilla stevia or stevia/sweetener packet

2 tsp baking powder

~The mixture should be thick like pancake batter but not too runny!

~ Let sit for 5-10 min to thicken, while oven preheats

~ Line a baking sheet with parchment paper & spray with coconut oil spray

TIP: if you spray the pan before adding the paper, it helps it stick down & stay in place

~ Use a spoon or even better a WATERMELON scooper to make 6 perfect, round, cookies

~ Bake @ 350 for 11-12 minutes & let cool completely before storing in the fridge

~~ GREAT to meal prep, make in a big batch (double or triple recipe) & enjoy for days~~
