Tomato Sauce with Chicken

Chicken in Tomato Cream Sauce!

Ingredients:

-150g diced sweet yellow onion

-15 ounce can of tomato sauce

-14 ounce can of diced tomatoes

-Splash of chicken broth (optional)

-1 lb 6 ounces of raw chicken breasts or 616 grams

-4 TB whipped cream cheese (or cream cheese of choice) (44g)

-8 TB fat free half & half (can use heavy cream but fat content will be higher for the recipe) (120ml)

-1 TB minced garlic

-1/2 TB Italian seasoning

-1 stevia packet to balance acidity in tomatoes or 1/2 tsp sugar of choice

-1/2 tsp pink salt

-1/2 tsp black pepper & red pepper flakes (optional)

-Fresh basil isn’t required but gives it a better flavor (1 cup chopped)

Instructions:

-Weigh the chicken breasts RAW, wash them and pat dry.

-Season both sides of breasts with avocado/coconut oil spray (can use oil but will increase fat content), 1/2 tsp italian seasoning, pink salt

-Place in air fryer basket @ 360 for 16 minutes and flip halfway at the 8 min mark

-As those are cooking, heat a skillet up on medium heat, with avocado/coconut oil spray, finely dice the sweet onion, add minced garlic.

-Let simmer until onions are soft (8-10 minutes), I add a splash of chicken broth to soften a bit quicker and cover with a lid for the first few minutes.

-Then add the diced tomatoes, tomato sauce, Italian Seasoning, basil, sugar packet, salt, crushed red pepper (if using) and black pepper and stir well to combine. Add half & half, cream cheese and cook until warmed through and bubbly, 1 to 2 minutes.

-Once chicken is cooked, place the chicken in the simmering sauce to keep breasts moist in thee center and to make sure they are fully cooked.

Serve on top of noodles, zoodles, pair it with broccoli/green beans and potatoes, options are endless!

Great protein source to prep and then have with a variety of sides!

Top with fresh mozzarella or parmesan!
