Zucchinni Protein Pancakes

Blueberry theme ✨🫐

I mean a hidden veggies, lower in carbs & HIGH in protein! These pancakes are SOOO macro friendly!!

Ingredients:

75 grams shredded zucchinni 

34 grams protein powder (I used 1st phorm Blueberry Muffin)

92 grams liquid egg whites

5 grams sf pudding mix

1/2 tsp baking powder

1 stevia packet


Details:

Shred / weigh zucchini, weigh out egg whites mix together one one  bowl than mix dry ingredients in a separate bowl. Let sit for 5 min to thicken up while the skillet pre heats on medium heat… spray with coconut oil spray before making pancakes!

Base of hidden veggie pancakes is:

197 calories (6.8c/2f/32p)

Topped with Blueberry Brunch Cashew butter: gf homemade cinnamon streusel, white chocolate chips… so heavenly paired with the blueberry protein (vanilla or cinnamon would be great too)!! These cashew blends are THICK & creamy!
