Breakfast Hash
Breakfast Hash!
This recipe is one serving and can be made truly for any meal! I mean, I love breakfast for dinner! The sis versailles too, if you want to add peppers, or zucchini, maybe butternut squash instead of sweet potato, go ahead! Macro balanced with a good amount of protein, fats and carbs!
Ingredients:
100g yellow onion, diced (1 medium)
1 slice of turkey bacon (or bacon)
110g of diced sweet potato, weighed raw (about half a medium sweet potato)
160 grams chopped Brussel sprouts, weighed raw (about 1.5 cups)
1 fried egg
1/2 tsp cumin, 1/4 tsp parika and garlic powder, with a dash of pink salt
Instructions:
-Preheat the oven to 425
-Chop up all the veggies, i would cut off Brussels ends, and cut into fourths, dice onion into strips and cube the sweet potato, place on a baking sheet & spray with avocado oil spray (or can use olive oil) but it will increase the fat content in this meal
-Cut up bacon of choice into little pieces and place on skillet and mix veggies around with seasoning
-Roast at 425 for 15 min, check at the 15 min mark, stir around veggies and place back in for another 10-15.
-While the veggies/bacon are finishing, go ahead and make a fried egg in the skillet.
-Take a small saute pan, spray with avocado oil, and crack the egg, cover with lid and let cook for 2 min on medium heat.
-Flip egg and let cook for another 2-3 minutes, depending on how you like it. For a runny yolk, i’d take it off the skillet, but if you want it overdone, you can leave the lid on for 3-4 more min.
Serve on top of the roasted veggies & bacon, enjoy!
