Baked Chicken Parmesan

Packed with protein & full of flavor! Comfort food is lightened up with this recipe!

Ingredients:

-3 skinless/boneless chicken breast (sliced in half to make 6)

-50g Italian seasoned breadcrumbs (I used GF ones)

-30g reduced fat Parmesan cheese

-50 fat free mozzarella

-1 egg for the wash

-185 grams (1 cup marinara sauce from TJ)

-Cooking spray

Instructions:

-Preheat oven to 425. Spray a large baking sheet / dish with cooking spray

-Combine breadcrumbs and Parmesan cheese in a bowl.

-Crack an egg in a bowl & whisk… Place raw chicken breasts in the egg wash (both sides need to be coated)

-Then dip into breadcrumb / park mixture. Place on baking sheet/ baking dish.

-Bake in oven for 30 minutes.

-Remove from oven, and pour marinara sauce over chicken evenly. Top with 50g mozzarella.

-Bake 5 more minutes or until cheese is melted

Top with fresh basil, serve with zucchini noodles, steamed broccoli, pasta, rice…
