Breakfast Sandwich

I love the combination of gooey egg with the crisp, bacon and the creaminess of the laughing cow cheese wedge that I added to the toasted english muffin! Literally a perfect meal, filled with protein (egg + turkey bacon), fats (egg & laughing cow wedge) and carbs (english muffin)!

Ingredients:

-Daves Killer English Muffin

-Laughing Cow Wedge (I used white cheddar)

-One Egg

-Uncured Turkey Bacon (I got from Trader joes but any will work)


Thats it! Super simple!

Directions:

-Heat up a skillet with avocado/olive oil spray on medium heat, add bacon of choice and let crisp 2-3 minutes each side.

-While that is cooking, toast your English muffin.

-Put the turkey bacon on a plate and crack the egg to fry in the skillet, to cook the center, I like to put a lid to have the egg steam a bit for 2 minutes, than flip.

-Take the toasted English muffin and spread the laughing cow wedge on it, next up add the turkey bacon, fried egg and smash them together!

Now, this is not a pretty sandwich to eat because the yolk explodes everywhere… but man its good!
