Chicken Pita Pocket

Joseph’s Low-Carb Flax, Oat Bran, and Whole Wheat Pita Bread is my favorite low-carb pita bread, and I use it to make so many quick but tasty dinners! This pita bread is loaded with fiber and much lower in carbs than traditional pita bread!


Quick lunch and or dinner idea that is so versatile with what you stuff inside!

Ingredients:

-Josephs Pita Bread (I found at Publix and or Walmart here but also on Amazon)

-2 TB of hummus (I used TJ roasted garlic but can use any hummus or spread of your choice)

-2 oz grilled chicken (Can increase protein amount if you wish)

-50g diced cucumber

-50g pickled onion (Recipe i’ll share below)

-Handful of lettuce (I don’t track it)

Air fry or toast your pita till its crispy the spread your hummus, and stuff everything else in! 

Full of protein, fats and carbs!

As for he pickled onions… its super simple!
I just thinly cut red onion (2-3) and place in a container with half apple cider vinegar and half warm water, SHAKE and stir in two Stevia/ Splenda packets. Let soak for at least one day and even better the longer they soak!
