Cashew Butter & Jelly Baked Oats

Well, I was inspired by PB & JELLY bc that's the best COMBO!!!

But all I had for all natural nut butters was cashew butter & to be honest they are my fav nuts!! 

Made bake for my sis, who is vegan but will eat eggs/ fish!

I would recommend subbing PB for more of that rich flavor but the cashew butter is just so decadent paired with oats!

~ 2 cups rolled oats

~ 1.5 cups Silk Cashew Milk

~ 1/3 cup nut butter (I used cashew but PB I think would be better)

~ 1/3 cup maple syrup or honey (I used Walden Farms SF walnut syrup)

~ 1 egg

~ 1 TB flaxseeds or can use chia seeds

~ 1 tsp baking powder

~ 1 tsp vanilla or (I used vanilla stevia drops)

~ 1/4 sea salt

~ 1/4 cup raspberry or strawberry jam or 1/2 cup berries of choice

Preheat the oven to 350!

In a medium bowl, mix together all the wet ingredients, add in the dry & MIX!

If using jam, wait to add it to the top, if using berries, mixing at the end & frozen berries could be used too!

Bake in a greased dish (I sprayed with coconut oil). I used a circle casserole dish bc I didn’t have a 8x6  pan which is what I would have used. 

Bake for 30-45 min depending on the size of your dish.

Makes about 3-4 servings depending on the size you make the portions! My sister doesn’t track macros but I calculated them for you;

Store covered in the fridge for up to a week or freeze some of it for later use!!

You can warm it up in the oven when you go to eat it, or have it chilled from the fridge, top it with some yogurt and a drizzle of nut butter would be DELISH!

Cut the recipe in 4 servings, each piece is 282 calories (9.2 protein, 38.6c, 11.2 fat)
