Chicken Mushroom Alfredo
A Creamy Mushroom Chicken recipe with tender and juicy chicken smothered in a delicious creamy thyme, alfredo sauce. This is a quick and easy creamy chicken skillet recipe that’s perfect for busy weeknights and can be paired with anything: pasta, zucchini noodles, broccoli, quinoa, rice… options are endless!
Ingredients:
-450g weighed RAW chicken breasts
-3 containers of diced white mushrooms
-150g diced sweet yellow onion
-1 TB minced garlic
-2 cups low sodium chicken broth
-4 aged white cheddar laughing cow cheese wedges
-30g reduced fat grated parmesan
-pink salt & pepper to taste
-Fresh thyme (didn’t measure) to add more flavor - optional
-1 TB arrowroot (can use cornstarch) to thicken sauce - optional
Directions:
-First up, your going to air fry your chicken breasts which makes them super crispy!
-Wash & pat dry the chicken breasts.
-Place in the air fryer after spraying both sides with avo/coconut/olive oil spray & add italian seasoning on each side
-Turn air fryer to 375 & air fry for 8 minutes, turn over breasts to evenly cook them and cook for another 10.
***Once done, THE KEY, is to place on a dish with a splash of water and cover asap with tinfoil to allow chicken breasts to stay juicy and tender while they finish to cook the inside!
-While those are cooking, saute diced onion, minced garlic until translucent in a skillet with avocado spray on medium heat. Add a splash of chicken broth if they are browning.
-Add mushrooms after 5 minutes of cooking onion and cover with lid to steam/soften for 3-5 minutes. Once you see liquid, uncover and turn heat up to brown the mushrooms, stirring every few minutes,
-Take a blender and blend the laughing cow wedges, parm, and chicken broth.
-Add to browned mushrooms/onion mixture in the pan.
-To make the arrowroot or cornstarch “slurry” mix 1 TB cold water and 1 TB the arrowroot or cornstarch and add to pan with sauce, mushrooms, turn heat to simmer and stir around to thicken sauce.
-Add chicken under tinfoil & add fresh thyme!!
