Single Serving Buffalo Mac N Cheese!!
This is the perfect comforting meal you can prep for yourself! Double or triple batch it to have for leftovers, but cooking and feeding just myself, I sometimes like to just have ONE meal and not make a huge recipe with leftovers for days 😆
A meatless, mac n cheese that’s tangy, creamy, easy to make, and full of protein and flavor.
Ingredients:
-100g Cauliflower Florets
-1 light Laughing Cow Cheese Wedge
-40g Al Dente Carba Nada Pasta (found at Publix here on amazon, higher in fiber & protein)
-50g 2% milk Good Culture Cottage Cheese
-20g reduce fat cheddar cheese
-1/4 cup franks hot sauce (less if you don’t love too much spice)
-Optional: splash of chicken broth for the “sauce”
-pinksalt, pepper, garlic powder to taste
-Garnish with chopped green onions
Details:
-Steamed cauliflower in boiling water for 4-6 minutes or until tender with a fork
-Boil pasta & set aside
-While both of those are cooking: place the cottage cheese, laughing cow wedge, hot sauce & spices in a food processor… if too thick, add a splash of chicken broth (maybe a few TB) to make it a bit more “runny” like sauce.
-In a sauté pan, add in the blended sauce, bring to a boil & add 1/2 TB cornstarch or arrowroot mixed with 1/2 TB water to create a “paste”, pour this slurry into the sauce in the saute pan and it’ll help thicken it, next up add noodles & steamed cauli.
-Turn off heat & stir in cheese & top with green onions
