Chicken Tortilla Soup

Soup is perfect any time of day, any season. But it is especially amazing when it is cold outside or you just want some comfort food. 

Now, usually comfort food comes at a cost nutritionally. But not this soup! It has so many zesty flavors and ingredients that warm up your soul and make your taste buds dance in joy. 

Ingredients:

  • 2 bell peppers (300g)

  • 2 diced shallots (2 TB)

  • 1 sweet yellow onion (100g)

  • Minced garlic

  • 1 package of frozen corn (3 cups)

  • 2 cans of black beans

  • 2 jalapeños

  • 6-8 cups chicken broth

  • Salt, pepper, Trader joe’s chili lime seasoning to taste & a Mexican blend

  • 4 diced up pre-grilled chicken breasts


DETAILS:

Sauté the diced onion and shallots in a large stock pot with garlic in coconut / avocado spray until translucent.

On low heat would be best… if they start to stick, add in a splash of chicken broth! Next up, add finely chopped bell peppers, jalapeños, and let simmer until soft (10-15 min).

Then you can add the froze corn, black beans and spices! The grilled chicken was the last to be added. But can also add rotisserie chicken that is already made. Ground chicken or turkey as well could work here (brown each separately & once cooked, you could add them into the pot)!


Bring to a boil and let simmer for 45 min to an hour to let the flavors combine!

Top with fresh cilantro, tortilla strips, Mexican cheese, sour cream or a dollop of cottage cheese!

Store in an airtight container for up to 5 days or freeze for longer!
