Spaghetti Squash “Alfredo”

Single serving, macro friendly, “cheesy”, lower carb entree option!!


What you need:

~Spaghetti squash

~Protein of choice

~Yellow onion

~Sugar snap peas

~1 white cheddar laughing cow wedge or flavor of choice (or can use cream cheese)

~Butter spray

~Chicken broth

~Optional seasonings: coconut/avo oil spray, pink salt, garlic, kernel popcorn white cheddar seasoning



Details: 

~To start, you’ll want to get your spaghetti squash ready… I like to cut it down the middle and scoop out the seeds. 

Preheat oven to 425, and line a sheet pan with tinfoil or a reusable roasting mat (I have on linked in my amazon store) & spray with coconut oil spray.

After you scoop out the seeds, spray the inner flesh with coconut oil spray & season with pink salt & garlic powder & face DOWN, with the two butts facing up.

I would roast for 30-40 min depending on the size, and halfway, check to see if you can fork out the inner squash like pasta (should be soft).


~I prepped 1 lb of extra lean ground turkey (can do chicken) for the week and for this entree, I just used 3 oz. Once I browed the meat, I separated out the serving I wanted for this dish ad the stored the rest for later use i a plastic container.


~While squash is cooking, I finely chopped half a sweet yellow onion and added it into a skillet with coconut oil spray o low heat, let that browned with trimmed sugar snap peas. 

You can use broccoli or green beans as well. I browned the onions/ peas first with sea salt then added a splash of chicken broth for added flavor and allows veggies to soften up.


~Once the squash was done, I let cool and weighed out 200 grams then added it to the skillet with browed onions/snap peas. Added the group turkey I prepped on the side, and used a couple sprite of the spray butter (for that “creamy” flavor), white cheddar kernel popcorn seasoning (promise, its so good)!! If the dish is o the dry side, add in more chicken broth! Last but not least, add in laughing cow wedge to melt! This is what adds that cheesiness! 

That is it!! Dig in!
