Pumpkin Turkey Bolognese
This recipe lasted me 4 nights with about 300-400 grams a serving! SO much volume, especially using the @palmini_pasta (hearts of palm) noodles that are low carb
The Palmini linguine I bought in bulk off amazon, and I would say it takes on the flavor of the dish, with no weird texture at all!!

-1/2 pound of 99% extra lean ground turkey (Fav is from trader joes) I weighed out half RAW before cooking
-1 Sweet yellow onion
-1 Shallot
-1 Red bell pepper
-2 Frozen garlic cubes (DOROT brand from trader joes)
-1.5 cup Libby’s pumpkin puree
-1 cup or so of low sodium chicken broth (I added more but depends if you want the sauce thicker like chili or thinner like a sauce)
-1 squeezed lemon
-1 can of diced and fire roasted tomatoes (with green chilis, and I didn’t drain it)
-1 package of the Palmini pasta (drained)
-2 TB whipped greek yogurt cream cheese (Kroger or Walmart has this)
-Spices are no exact measurement but just do what you prefer: Cumin, pink salt, black pepper, chili powder, paprika, red chili flakes, cinnamon, pumpkin pie spice
HOW TO
-Heat up a wok, skillet or pan big enough and spray with coconut oil.
-Add in 1 shallot, diced onion, garlic, lemon juice to caramelize / brown that.
-Make ground turkey (you could use 1 pound) in a separate skillet.
-Add chicken broth, canned tomatoes, pumpkin puree, chopped bell pepper into onion skillet and soften
(this is where you may add more chicken broth and cover with a lid to help moisten the veggies)
-Once ground turkey is slightly browned, add it to the big skillet & add spices to your desire!
-Simmer on low for 20-30 min & add in cream cheese with the Palmini noodles….
Cover or put on low simmer for upto an hour so soften linguine and to let the flavors combine!
Each serving is 156 calories- macros (1 fat, 19 carbs, 17.4 protein)
