Roasted Red Pepper, Basil Sauce

I love adding it to pasta, zoodles, gnocchi, protein/veggies to add flavor!!!

  • Ingredients: 

  • 3 TB whipped greek yogurt cream cheese (lower in fat) (found at kroger)

  • 1 -3 cups Chicken broth low sodium (I eyeball and may need to add more) (helps thin out the sauce)

  • 2 sweet yellow onions

  • 2 sweet red bell peppers

  • 1 bunch of fresh basil

  • 1-2 TB tomato paste (thickener) 

Season how you prefer but I add in garlic, italian seasoning, pink salt, pepper, popcorn kernel seasonings white cheddar & garlic parm are great added in!

DEETS: 

Preheat oven to 425: Cut up bell peppers & yellow onions .. spray with coconut oil spray

Roast for 25-40 min or until soft 

BLEND all ingredients in a blender/ food processor 

Taste & see if you need to add more spice, or if too thick, add more chicken broth!

I portioned it into 2 servings, weighed the final batch out and divided that by 2!

446 grams was the batch /2= 223 grams that I separated out.

Double the recipe if you want to prep a bigger batch!

Each serving comes down to 93 calories - macros ( 2.7 fat, 13 carb, 4.4 protein)
