Spaghetti Squash Chili “Alfredo”

Most nights I just throw together random ingredients & bam there’s a bowl for dinner!

But this combo has been on repeat because it is simple but yet so flavorful!!!

#meatless too!

Ingredients:

Roasted spaghetti squash (I used here 200 grams)

TJ Hearts of Palm Pasta (85 grams)

Air fried bell pepper & half a sweet yellow onion

Good Culture Cottage Cheese or any brand works (100 grams)

Star of the show…. G Hugh’s Sweet Chili Sauce (or any you prefer) but this is incredible!

Instructions:

Preheat oven to 400.

Cut spaghetti squash in half, deseed, spray with olive oil spray, season with pink salt, lie faced down on a baking sheet lined with tinfoil or a reusable mat (I have some linked in my amazon store). Roast for 25-30 min or until you can fork out the flesh of the squash. 

Meanwhile when that is cooking, cut up the bell pepper and half a sweet yellow onion into strips and air fryer @ 400 for 12 min with olive oil spray. I season after it is done so the air fryer basket doesn’t get as dirty after each use. Shake  the basket about 5-6 min in to even crispy up the veggies. If you do not have an air fryer, that is fine… you can just roasted the peppers & onions @ 400 for 22-26 minutes or until crispy how you like.

Sauté the Hearts of Palm pasta in little olive oil spray in a skillet until browned on medium heat. 

Once spaghetti squash is done cooking, I will let it cool a bit and peel off the skin.
Weigh out desired amount of spaghetti squash you want, I like about 200 grams, throw it into the cooked hearts of palm “pasta”, add in air fried veggies… season with anything but I like the Nacho Cheese dairy free Flavorgod. 

Last but not least, add in the sauce… I use about 30-40 grams of G Hugh’s, any sauce will do but this one is only 2 carbs for 30g!

Top with cottage cheese for some extra protein & added creaminess!!! Trust me, once you stir it all together \, it tastes like Alfredo & the hearts of palm “pasta” just takes on the flavor of the dish!
