Stuffed Cabbage Casserole
This casserole is made with cauli rice which is lower carb and can be served alongside rice for those that want it!
You can switch up the protein source you use as well: Chicken, Beef, I used 99% extra lean ground turkey!
Ingredients:
-Avo / olive oil spray for cooking
-10 oz extra lean ground turkey (weighed RAW)
-150g Sweet Onion, about 1 onion (chopped)
-200g Bell Pepper, about 2 small ones (seeded, chopped)
-2 1 TB minced garlic (chopped)
-14 oz Can Fire Roasted Diced Tomatoes
-1 15oz can of tomato sauce so about 425g
-454g or 4 cups of fresh cauli rice, if frozen you will want to use a 10 oz package
-1/2 teaspoon Smoked Paprika, Dried Oregano, Cumin Powder, Chili Powder
-Salt/Pepper, (to taste)
-700g or 1 Small Head Green Cabbage, (cored, chopped)
-80g or 1/2 cup cheese of choice… I used fat free cheddar
Instructions:
-Preheat oven to 375F. Spray a 13" x 8" casserole dish with non-stick spray or mist with olive oil.
-Saute the protein of choice in the spray, on medium heat, stirring every few minutes to break up chunks until browned.
-While the meat cooks, chop onion/ peppers finely, place in the skillet with the meat, add the garlic/spices.
-Next is to add the cauli rice, in with the meat mixture, IF frozen….microwave the frozen cauliflower rice in the package, following package directions.
-When the cauliflower is barely softened, stir it into the meat-onion mixture.
-Then stir in the drained petite dice tomatoes and tomato sauce, reduce heat to low, and let the mixture simmer.
-Chop the cabbage into strips. In another large, deep frying pan heat it, add the oil spray (I use avocado oil) Add the cabbage and cook until the cabbage is softened and starting to brown, about 8 minutes.
-In the dish make a layer of half the cabbage, half the meat-cauliflower rice mixture, and 30g (half) of the cheese.
-Make a second layer of cabbage, meat mixture, and cheese.
-Bake for about 45 minutes, or until the mixture is bubbling and the top is starting to slightly brown.
This makes 5 servings, one is: 228 calories (1f/29c/26p) (463 grams)
