Vegan Protein Pancakes
Have you jumped on that pancake cereal bandwagon?!
Well, if not… I have a perfect brunch, brekkie, snack idea!!
Vegan chocolate protein MINI pancakes!!! Anything bite size is just way more fun to eat, right?!
This dairy free protein is my FAV, no chalky aftertaste & it tastes like brownie batter!
Made these for my sis, who is actually vegan! Which I am not (I do have a dairy intolerance) but I like to use this vegan protein source to vary the ingredients I eat! Plus it’s a good switch up to my normal Level-1 which is a whey isolate and easier to digest & surprisingly causes zero bloat bc of how it’s processed at a lower temp!!
Ingredients~
1/2 cup rolled oats
1/2 cup gluten free flour
1 banana mashed (I used an overripe one)
1 cup dairy free milk (I used unsweetened cashew)
2 scoops protein powder ~ 54 grams (only tried with vegan so idk how others will work)
1 1/2 tsp baking powder
1/4 tsp baking soda
1 TB coconut oil or vegan butter for frying (can skip & use coconut oil spray to decrease the fat amount)
DEATZ:
~ Place all ingredients in a blender on high to make the batter!
~ Heat up a skillet with the oil or butter (which is the BEST way to get them perfectly crisp)
~ Using a measuring cup to transfer batter to skillet to cook or even in a baggie, pour batter into a ziplock, cut the corner (small) and then it's the perfect pouch to squeeze out and place desired amount on the heated skillet!
~ Cook on low-medium heat until you see bubbles on-top of the pancakes & that’s when you know to flip!
~ This is a BIG batch- so you can prep them and have them for multiple meals!
Top with syrup OR get fancy, place them in a bowl and pour milk overtop like cereal!!

For the WHOLE batch its 834 calories (21 fat, 115 carbs, 49 protein)
If it were me, I would divide this recipe into 3-4 servings!
