Chicken Salad

This easy healthy chicken salad with Greek Yogurt and grapes makes a great chicken salad for meal prep. This recipe is also great or for easy lunches and light dinners.

~ 12 oz (weighed COOKED) I grilled out chicken but can also you shredded chicken here.

~ 1 lemon squeezed 

~ 150 grams purple grapes (cut into 8ths)

~ 90 grams diced red onion

~ 100 grams diced celery

~ 200 grams 0% plain greek yogurt 

~ Salt & peper to taste


Cook chicken how you wish, but I think grilling it made it have that much more flavor. I diced everything & mixed it in a big mixing bowl, refrigerated over night to let flavors mix!

Super simple to whip together! Versatile with how you eat it as well, can put into lettuce cups to a lower carb version, serve it with pita chips, and or air fry an Outer Aisle Cauli Sandwich thin like I did!

@ 400 for 8 min, flipping the thins half way at 4 mins to get the opposite side crispy!

They are low carb, gluten free, with minimal ingredients such as eggs, cheese and cauli!

2 sandwich thins are 100 calories: 5 fat/3 carb/9 protein
