Cottage Cheese “Alfredo”
Say what??!!!
High protein and low fat sauce that is actually good for you!!!
I looovvveee italian food, but being GF and not being able to tolerate much dairy, creamy pasta dishes are a no go for me…
I have created this sauce and let me tell you its better than @ a restaurant and sooo much healthier for you!
RECIPE:
2 cups low sodium chicken broth (I used Trader Joe’s)
1 container (2 cups) cottage cheese (I used lactaid brand) or can use any 1-2% you prefer.
4 tablespoons greek yogurt whipped cream cheese
Spoonful of minced garlic, shakes of pink salt
Blend ingredients on HIGH in a blender than once that is blended, sauté 1 diced shallot, juice of half a lemon, minced garlic in avocado oil spray until it browns…
Then add the blended sauce into the skillet and simmer on low for 10-15 minutes- this thickens the mixture a little bit!
Keep stirring so it doesn’t burn… if you want to add in a sprinkle of cheese or nutritional yeast (for dairy free) then this is when you would!
Last week I had this for about 4 nights in a row because it was so rich and creamy! I served it with roasted spaghetti squash, air fried broccoli/ cauliflower/ onions and sautéed mushrooms!
I divided it into 4 servings- about 1/2 cup each
For 1 serving: 104 calories - macros (3g fat, 8g carbs, 14g protein)
