Creamy Cauliflower Risotto


A quick, lower carb cauliflower risotto with chicken and asparagus, inspired by the best ever traditional risotto recipe. Easy and so creamy, this cauliflower risotto is super versatile with choosing a veggie you like to mix into the “rice” and a protein source to top!

This recipe specifically, I have chosen asparagus and grilled chicken that I had prepped prior to have for the week of my main source of protein for dinners!

Ingredients:

1/4-1/3 cup low sodium chicken broth- adds flavor & moistness so the dish doesn’t dry out

Olive oil spray and or butter spray in place of olive oil (to save on fat calories but can still use that)

1/2 tsp Minced garlic 

Pinch of pink salt

One lemon Squeezed

1/2 a sweet yellow onion diced

1 package of frozen cauli rice (green giant and or I used a small bag from Trader Joes)

Laughing cow cheese wedge for creaminess (White cheddar is what I used, but you can use any flavor and or another brand of cottage cheese)

Instructions:

Sauté the diced sweet yellow onion with a spray of olive oil, little butter spray, minced garlic, salt and about 1/4 cup of chicken broth to start on medium heat.

Wait until the onion gets caramelized, and if need be, you can add more chicken broth so it doesn’t burn & turn heat down to low.

After then is done, throw in the frozen cauli rice (desired amount), and let that soften, next up addd the laughing cow cheese wedge or cream cheese of choice and lemon juice.

Boil water & steam asparagus in that for 1-2 min.

Another great veggie to add would be mushrooms that I would saute with the onions, or you can do frozen peas!

Last up I add the grilled chicken that I logged as GRILLED, since I weighed it GRILLED after it was done cooking. The thing to remember with weighing & logging meat is that if you weigh it raw, log it as the raw weight or vice versa. The weight will change after it is cooked ;)

Total macros for this single serving risotto is 267 calories (23c/4f/35p)

— depending on the veggie you use, the protein & amount, as well as if you use cream cheese vs a laughing cow wedge.
