Gingerbread Baked Oats
These baked oats are filled with it all! The smell and taste is just like Christmas!!
Hey who doesn’t LOVE the gingerbread spice all your round?!
Perfect to meal prep @ the beginning of the week- I kept them in the fridge (portioned out) for up to a week, reheated in the morning for 2-3 min with a drizzle of SF walnut walden farms syrup & man… they are thick and delish!!
Ingredients:
Molasses ~ 2 tablespoons (gives it a richer flavor)
Liquid egg whites ~ 276 grams (can add more if you wish to up the protein)
Rolled oats (fav is Trader Joe's GF) ~ 2 cups
0% fage plain greek yogurt ~ 1/2 cup
SF syrup (I used maple walnut) ~ 1/4 cup
Riced carrots in food processor (adds micronutrients & volume, can’t even taste them) ~ 100-200 grams
Unsweetened Silk Cashew Milk (or water) ~ 1/2 cup
1 tsp baking powder
dash of salt
Gingerbread spice (or cinnamon and nutmeg to taste)
6 stevia packets
Directions:
Preheat oven to 350
Mix dry ingredients & the wet in 2 separate bowls
(no need to pulse oats into flour, I kept them whole)
Combine both mixtures 7 pour into a baking dish lined with parchment paper
TIP: I sprayed the pan before the parchment paper for it to stick and then again on top before pouring the batter!
tracking tip : I put ALL ingredients in myfitnesspal and “created” my own recipe.
I weighed out my polka dot dish first before adding the batter = 1504 grams
then I baked the oats and weighed the pan and it all together = 2505
I took 2505- (the pan weight) 1504 = 1001
I wanted 5 servings out of it so I divided 1001 by 5 = each serving is about 200 grams!
If you want bigger slices of the gingerbread oats, divide the cooked weight by 3 or 4!
I added cookie dough & drizzle of nut butter on top for some added YUMMINESS! But add whatever you love!
