Stove Top Chicken

Tried out this fabbbb new chicken recipe, it’s simple & full of flavor! Plus added the FALL HARVEST Trader Joe’s salsa!

Ok I will admit… I have like 8+ jars stocked in my pantry because it is THAT GOOD!

Set yourself up for success this next week with prepping a batch of protein- I love to do that to through into salads, crunch wraps, ontop of nachos, into my “mush bowls”….my family calls my dinners that, hahaha! Prepping protein is EASY & will save ya time later on!

DETAILS!!!

  • I got thinly sliced boneless chicken breast from Whole Foods (love the quality of meat there)

  • Fall Harvest Salsa (or any salsa of choice)

  • Stock Pot 

  • Cilantro & Lime to garnish (both optional)

Directions-

I do not have a crockpot so this was easily done on my stove.

I place the raw chicken in the stock pot with coconut oil spray (I don’t track it) on medium heat.

Flipped occasionally until browned to caramelize each side of the chicken breast - 12-15 minutes.

Lowered the heat to low, added the full jar of salsa & covered it for 16 minutes.

Once that was up, I put the heat to simmer, and stirred around the chicken/ salsa with tweezers to coat them.

When the chicken is fully cooked, it will be easily shredded with forks!!

This recipe made about 3-4 big servings > each weighing a total of 150-180 grams = 15-18 grams or protein!

The final weight of the cooked chicken / salsa was 473 grams… (put as the servings)

SO each time I go to log it, I will weigh out how many “servings” I want in grams on the scale.

— After I did create my own “recipe” for this in MFP. Make sure to weigh chicken RAW in the recipe bc the weight of it cooked will vary.

Serve with cilantro & a squeeze of lime for the ultimate, high protein, edition to any meal!!
