ZOATS!! Zucchini oats ;)

Guys, there is a new oatmeal hybrid in town… it is not my beloved carrot cake oats! However, it is still packed with a veggie, zucchini—— ZOATS!! I was skeptical but they turned out so rich, filling, creamy & even added chia seeds for some extra omega-3 (known to help decrease inflammation)!! 

ZOATS

35 grams dry oats

113 grams riced zucchini (in food processor)

30 ml skinny syrup

100 ml water

~Stir & microwave for 4 minutes then add in….

2 servings (92 grams) liquid egg whites = 10 grams of protein

1 tsp chia seeds

50 ml unsweetened cashew milk milk of choice 

1/4 tsp baking powder - optional but makes it fluffy like cake!

~Microwave for 4 minutes again

I made mine in a glass rectangle pyrex, from TJ maxx & then stored it in the fridge overnight to thicken & let chia seeds absorb the water!

Reheated the next morning with a splash of cashew milk, so it isn’t dried out for 2-3 min in the microwave!
